FRITTATA “SMOKED CHEDDAR”

 

INGREDIENTS:

  • 8 OZ EXTRA SOFT TOFU 
  • 1 CONTAINER JUST EGG 
  • 4 OZ MISHA’S SMOKED CHEDDAR CHEESE 
  • 1.5 OZ CHICKPEA FLOUR 
  • 1 TBSP TOFU SCRAMBLE MAGIC (BY AFCAFE); IF TOFU MAGIC IS UNAVAILABLE, YOU CAN SUBSTITUE 2 TSP NUTRITIONAL YEAST AND 1 TSP BLACK SALT 
  • 1 TSP SALT 
  • 2 TBSP OLIVE OIL  
  • 1 CUP BEYOND CRUMBLE
  • 1 CUP CHOPPED PORTOBELLO MUSHROOMS
  • 1 CUP SPINACH 
  • 1 CUP RED PEPPER

DIRECTIONS: 

Step 1

Preheat oven to 350 F. 

Step 2

Put tofu, just egg, olive oil, Smoked Cheddar cheese, salt, tofu magic, and flour in blender until smooth. Pour into a 9 inch oven safe, well greased/non stick dish. 

Step 3

Start to check after 30 minutes in the oven. Frittata should give a little on top, but not be watery.
