VANILLA CHOCOLATE CHIP CHEESECAKE “RICOTTA”

INGREDIENTS:
CRUST:
- 15 GRAHAM CRACKERS
- 6 TBSP PLANT BUTTER
- 3 TBSP CANE SUGAR
- 1/8 TSP SALT
CHEESECAKE FILLING:
- 16 OZ MISHA’S RICOTTA CHEESE
- 8 OZ COCONUT YOGURT
- 1/4 CUP FLOUR
- 1 TBSP ORANGE FLAVORED OLIVE OIL
- 1 TBSP VANILLA EXTRACT
- 4 TBSP JUST EGG
- PINCH OF CINNAMON
- 1/4 CUP SUGAR
- 1/4 CUP AGAVE
- 1/4 CUP PLANT MILK
- 1/2 CUP CHOCOLATE CHIPS
- WHIPPED CREAM (FOR TOPPING)
- 1 TSP BAKING POWDER
- 16 OZ MISHA’S RICOTTA CHEESE
- 8 OZ COCONUT YOGURT
DIRECTIONS:
Step 1
Preheat oven to 300° F.
Step 2
Blend crackers, salt, and sugar in food processor until smooth. Move to bowl and add butter (melted). Mix together and press crust into a 9 inch pan.
Step 3
Bake crust for 7-10 minutes then set aside.
Step 4
Thoroughly mix dry ingredients (flour, cinnamon, sugar, baking powder).
Step 5
Add remaining ingredients together, but don’t over mix (mixing can be done by hand).
Step 6
Bake at 300° F for 50-70 minutes (check at 50 minutes). Be sure not to over bake.
Step 7
Top with whipped cream and serve.
