VANILLA CHOCOLATE CHIP CHEESECAKE “RICOTTA”


INGREDIENTS: 

CRUST:

  • 15 GRAHAM CRACKERS 
  • 6 TBSP PLANT BUTTER 
  • 3 TBSP CANE SUGAR 
  • 1/8 TSP SALT

CHEESECAKE FILLING:

  • 16 OZ MISHA’S RICOTTA CHEESE 
  • 8 OZ COCONUT YOGURT
  • 1/4 CUP FLOUR 
  • 1 TBSP ORANGE FLAVORED OLIVE OIL  
  • 1 TBSP VANILLA EXTRACT  
  • 4 TBSP JUST EGG 
  • PINCH OF CINNAMON 
  • 1/4 CUP SUGAR 
  • 1/4 CUP AGAVE 
  • 1/4 CUP PLANT MILK 
  • 1/2 CUP CHOCOLATE CHIPS 
  • WHIPPED CREAM (FOR TOPPING) 
  • 1 TSP BAKING POWDER 
  • 16 OZ MISHA’S RICOTTA CHEESE 
  • 8 OZ COCONUT YOGURT 

DIRECTIONS: 

Step 1

Preheat oven to 300° F.

Step 2

Blend crackers, salt, and sugar in food processor until smooth. Move to bowl and add butter (melted). Mix together and press crust into a 9 inch pan. 

Step 3

Bake crust for 7-10 minutes then set aside. 

Step 4

Thoroughly mix dry ingredients (flour, cinnamon, sugar, baking powder). 

Step 5

Add remaining ingredients together, but don’t over mix (mixing can be done by hand). 

Step 6

Bake at 300° F for 50-70 minutes (check at 50 minutes). Be sure not to over bake. 

Step 7 

Top with whipped cream and serve.
