Potatoes Au Gratin ​- FC

INGREDIENTS (French Connection)

  • 2 1/2 Lbs Of Red Potatoes
  • 1 Onion
  • 3 Tbsp Plant-based Butter
  • 1 Tsp Dry Mustard
  • 2 Cups Plant Milk
  • 1 Cup Water
  • 1/4 Cup Olive Oil
  • 4.5 Oz Misha’s French Connection Cheese
  • 1/2 Tbsp Truffle Salt
  • 1/4 Tsp Sea Salt Pepper To Taste

INSTRUCTIONS

  1. Finely chop/slice the onion. Using a mandolin (easiest), cut potatoes into thin slices and place a small amount of onion (maybe 1/2 teaspoon or so) in between each of the slices of potatoes stacking horizontally around the baking dish until the dish is full or potatoes are finished.

  2. Preheat oven to 400 F. 

  3. Place water, milk, butter, oil, mustard, French Connection Cheese, and salts in a pot and heat to a simmer (about 3-5 minutes). Stir continuously until smooth. 

  4. Pour this mixture over the potatoes. (Don’t use a baking dish that is too tall, we want the potatoes to be completely covered in the mixture as it will evaporate some in the oven). 

  5. Use black pepper on top of the dish then place in hot oven for 90 minutes.  Serve.

INGREDIENTS (Smoked Cheddar)

Macaroni & Cheese

  • 1 1/2 cups (dairy-free) butter
  • 2 tbsp all-purpose flour
  • 3 cups (cashew) milk
  • 1 cup vegetable stock
  • 3 tbsp dijon mustard
  • 1/2 cup nutritional yeast (optional)
  • 4 ounces Misha’s Smoked Cheddar cheese
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp mushroom powder
  • 1/2 tsp nutmeg
  • 1 tsp of salt
  • 1 tsp black pepper

INSTRUCTIONS

  1. Cook the pasta according to the package’s directions. Drain and set aside.

  2. Melt butter in a large saucepan over medium heat. Sprinkle in flour and whisk to combine. Cook for approximately one minute, whisking often.

  3. Slowly pour in about 2 cups or so of milk, whisking constantly until smooth. Slowly pour in the remaining liquids, while whisking for 2-4 minutes until combined and smooth.

  4. Remove sauce off the heat and add mustard, nutritional yeast, the remaining spices, salt, and pepper. Whisk in smoked cheddar cheese. Combine drained pasta with cheese sauce and serve.
